Every year when I’m planning my holiday dinners I think about just having a dessert party. I mean ham and mashed potatoes are great but you are fill up on them and don’t have enough room for the goodies at the end :(. My dad is now retired so this year he baked most of our must-have desserts for Thanksgiving, sweet potato pie, pecan pie, apple pie, so I got to have a little fun with dessert and try something new. These White Chocolate Raspberry Puffs are pretty, delicious, and bite size so you can eat
3 or 4 a couple of them and still have room for pie.

Alright guys, we have another cookies recipe for you. I told you Christmas is all about cookies. So glad January is all about dieting because I’m gonna need some help getting back on track! We showed you how to host a cookie exchange a couple of weeks ago and we shared our Caramel Macchiato cookies recipe. For the same party we also made our Cranberry and Pistachio cookies and these Peppermint Mocha cookies. They are the perfect mix of peppermint, chocolate, and coffee!
I think my favorite thing about this recipe is how soft and chewy these cookies are…well that and they are so easy to make. I have had so many cookies to make for the holidays that I’ll take whatever help I can get, so these cookies start with a mix. It is just a basic chocolate cookie mix that I made it my own by adding peppermint, coffee, and a chocolate drizzle.
Now, I’m all about my coffee but if you aren’t a coffee drinker don’t be turned off by the fact that is in this recipe. Coffee pairs really well with chocolate and brings out the rich chocolaty flavor. Add that to a little peppermint extract and a sprinkle of peppermint crumbles and you have an amazing cookie! These cookies were totally addictive! I ate way more than I should but it was worth it.
- 1 Bag of Betty Crocker Chocolate Cookie Mix + ingredients required on pacakge
- 1 tsp Peppermint extract
- 1 Tbsp Instant Coffee
- 1 c Peppermint, crushed
- 1 c Chocolate Chips
- Make cookies according to instructions on the package.
- Add instant coffee and peppermint extract.
- Bake according to instructions.
- Remove cookies from oven and let cool completely.
- Once cookies have cooled melt the chocolate and drizzle it over the cookies then sprinkle immediately with crushed peppermint.
I’ve got one more cookie recipe coming up for you at the end of the week and then I’m done for the holiday season…maybe ;). What can I say? I love cookie season!
