Bacon Ranch Chicken Biscuit Casserole
This Bacon Ranch Chicken Biscuit Casserole recipe is made with rotisserie chicken for a quick and easy dinner!
There are so many things I love about this recipe bacon…ranch…biscuits….I’m not sure there is any way you could actually go wrong with those combinations of ingredients. The fact that they are all baked up in one easy casserole recipe is just icing on the cake…or biscuit in this case.

I make a lot of casseroles, especially in the winter. They are simple to throw together and I can usually make them ahead of time so all I have to do after a long day of kid wrangling and housework, is throw it in the oven. This one is extra easy because it is made with canned biscuits and rotisserie chicken. I’m all about rotisserie chicken, it saves me so much time in the kitchen and nothing tastes better!
All I do is chop up a couple of cups of rotisserie chicken and toss it in a bowl with cream cheese, bacon, and diced tomatoes. Then I put everything in a greased casserole dish and sprinkle it with a little cheddar cheese, because you can never have too much cheese. The casserole takes about 30 minutes to bake and then I give it 10 minutes to sit and cool a little so everything holds together better. Then I drizzle the whole thing with ranch dressing, because ranch dressing makes everything better!
Speaking of ranch and how much better it makes things, you’ve gotta get your veggies into this meal somehow so while the casserole is cooling I usually grab a bag of Birds Eye® Flavor Full Ranch Broccoli out of the freezer. Bacon Ranch Chicken Biscuit Casserole
Ingredients
- 16 ounces Jumbo Biscuits, quartered
- 2-1/2 cups Rotisserie chicken, shredded
- 14.5 ounces Diced Tomatoes, undrained
- ½ cup Bacon, cooked & diced
- 8 ounces Cream Cheese
- 1 cup Cheddar Cheese
- Ranch dressing, as much as you like!
Instructions
- Preheat oven to 375°F.
- Grease a 13x9-inch baking dish and set aside.
- In a bowl combine chicken, biscuits, undrained tomatoes, bacon, and cream cheese.
- Place mixture in a greased baking dish and bake for 30 minutes.
- Add cheddar cheese and continue to bake until cheese has melted and biscuits are golden brown.
- Drizzle with Ranch dressing before serving.

I think you could substitute with cream of chicken soup. Pilsbury has a recipe on their site that is similar (more like a pot pie) and it uses 2
cans (10 1/2 oz each) cream of chicken soup.
