This cheesy Shrimp Casserole Recipe is a delicious combination of cheese, shrimp and rice in creamy mushroom soup, that can be served as a party appetizer or a weeknight family meal.
When Minute ® Rice asked us to try out their Minute ® Multi-Grain Medley it was perfect timing because I was just starting to plan out what dish I wanted to make for the New Year’s Eve party I’m attending.
The recipe is simple, you mix cooked rice, cooked shrimp, cheddar cheese, cream of mushroom soup and a few spices together and then bake it. I usually make it with wild rice but I loved it with Minute® Rice’s Minute® Multi-Grain Medley! It is gluten-free, made with a mix of 100% whole grains, including long grain brown rice, Thai red rice, wild rice and quinoa, AND Minute® Multi-Grain Medley cooks in the microwave in just 10 minutes so it makes an already easy recipe even easier.
When I make this dish as a family meal I make it in a big casserole dish but since I’m taking it to a New Year’s Eve party I wanted to make it a little fancier, so I’m cooking it in individual ramekins. Mine have lids but if yours don’t you can just cover them with aluminum foil. Since all of the ingredients are pre-cooked and you’re just waiting for the cheese to melt and the dish to heat all the way through, a large dish takes about 45 minutes in the oven. The great thing about serving it in individual ramekins is that it is ready even faster. In about 20 minutes you have a meal everyone will enjoy.
- 1 lb Shrimp , medium size
- 3 bags Minute® Multi-Grain Medley
- 1 can Cream of Mushroom soup
- 2 cups Cheddar cheese , shredded
- 2 tsp Old Bay seasoning
- 2 tsp Onion powder
- 1 tsp Salt
Preheat oven to 350° F.
Cook 3 bags of Minute® Multi-Grain Medley according to instructions on package.
In a separate pot boil water and add shrimp cooking, cooking for 3 - 4 minutes or until shrimp are cooked through. Drain shrimp.
Combine cooked rice, cooked shrimp and remaining ingredients in one bowl stirring to mix it together thoroughly.
Portion mixture into 6-8 ramekins.
Cover ramekins with lids or aluminum foil and place on a baking sheeting.
Bake in oven for 20 minutes or until cheesy is melted and bubbling.
Remove and serve.
