What You’ll Need

Air-Chilled Chicken Vs. Water-Cooled Chicken

Did you know that when chicken is processed it goes through a cooling process? The conventional method involves a cold-water bath. This water-cooling method results in the chicken absorbing excess moisture, especially in the skin.

Open Nature Air Chilled Chicken is processed using an air-chill method. This method involves cooling the chicken in a series of cold chambers with purified air. Since there is no water used the chicken doesn’t absorb water and you get chicken that looks better, tastes better, and picks up marinades better, which makes it perfect for absorbing all of that spicy harissa flavor!

What is Harissa Paste Made of?

Harissa is a very popular North African sauce made with the basic ingredients of red peppers, garlic, salt, and oil. It is basically like the North African version of ketchup, or maybe more like Sriracha, only it is packed with even more flavor and lots of spice. It is used as a condiment or as a marinade for many difference dishes. Sometimes it is even added soups or stews to give it a little extra kick.

How to Make It

Make the marinade. The marinade is really simple, just add the harissa paste, olive oil, and salt to a small bowl and stir it together until everything is well mixed.

Marinate the chicken. Place your chicken in a gallon freezer bag or a container with a lid and add the marinade. Toss the chicken in the marinade until it is well coated then seal it in its container and place it in the refrigerator to marinate.

Marinate the chicken for a minimum of 1 hour and no longer than 24 hours.

Cook the chicken. The great thing about this dish is you can cook it just about any way you want. Bake or grill the chicken at 400 degrees F for approximately 15-20 minutes or until the chicken has reached an internal temperature of 165 degrees F. Or, if you prefer, cut the chicken into 1 inch pieces and cook in a skillet over medium high heat for 15 minutes or until cooked through.

Can I Make it Ahead of Time?

Yes! This is a great recipe to make ahead of time. You can prepare the marinade and place the chicken and marinade in a gallon freezer bag. Seal it tightly and then store in the freezer for up to 3 months.

When you are ready to prepare the chicken remove it from the freezer and let it thaw in the refrigerator overnight. Then bake according the recipe instructions.

  • 2 pounds Open Nature® Air Chilled Chicken, mix of breasts and thighs
  • 1 cup Harissa Paste
  • 1/2 cup Olive oil
  • 1 teaspoon Salt

Instructions

  • In a small bowl combine the harissa paste, olive oil, and salt and stir it together until everything is well mixed.
  • Place your chicken in a gallon freezer bag or a container with a lid and add the marinade.
