This One Pot Creamy Bacon and Peas Pasta is an easy dinner recipe that takes less than 30 minutes to make!
I’m loving life these days. The sun has been shining and I’ve been spending my days at the pool with the kids watching them splash and play together, having a great time while I soak up a little sun. These are the kinds of summer days that memories are made of. We’re enjoying every minute but after a long day at the pool we all come home tired and hungry. Leaving the pool early to make dinner doesn’t fit with my summer plan so I’ve been relying on quick and easy recipes that every one will love but don’t take long to make.
I made this One Pot Creamy Bacon and Peas Pasta dish twice last week, it was that good! What’s not to like? Cream cheese, peas, pasta, mushrooms, and bacon. Mmm, bacon really does make everything better. I take my bacon pretty seriously so I always use Smithfield. Smithfield’s bacon is known for being smoked and cured to perfection. It comes in all sorts of cuts and flavors like Applewood, Cherrywood, and Thick Cut but I love the Smithfield Hometown Original Bacon with it’s smokey hickory flavor that is just as good with a side of eggs for breakfast as it is added to a one pot meal for dinner.
This one pot dish starts with 6 slices of Smithfield Hometown Original Bacon. How do you cook yours? Kat bakes hers in the oven but I think it tastes best when it is fried in a skillet. For this recipe that works best because it means I only dirty one dish making the meal. Once the bacon is cooked I save a little of the bacon grease and brown mushrooms, onions, and garlic in it. Once they have softened I add milk, chicken stock, and the pasta and I bring everything to a boil and cook it for about 7-10 minutes or until the pasta is al dente. Here’s a tip, if your pasta isn’t quite ready but you start running out of liquid just add a little more stock (about 1/4 – 1/2 c) and keep cooking it’ll get there in the end :). When my pasta is ready I stir in some frozen peas, sour cream, and cream cheese, and once everything is well combined I gently fold in my chopped up bacon. A little salt and pepper and some Parmesan cheese and that’s it, a complete meal in less than 30 minutes and only one pot to clean! If you want to make this recipe even faster try cooking up your Smithfield Hometown Original Bacon ahead of time and just save the grease for later. I usually cook the whole pound for breakfast then put aside 6 slices for dinner that night. That way the kids and I can stay at the pool longer! 🙂
- 6 slices Smithfield Hometown Original Bacon, chopped
- 1 clove Garlic
- ½ c Onion, diced
- 1 c Mushrooms
- 8 oz. Pasta
- 2 c Chicken stock
- 1 c Milk
- 1 c Peas, frozen
- 1 oz. Cream cheese
- ¼c Sour cream
- ¼ c Parmesan, shredded
- Salt and Pepper to taste
- In a large pan fry Smithfield Hometown Original Bacon over medium high heat until it is crisp.
- Set the bacon to the side and remove all but two tablespoons of bacon grease.
- Add mushrooms and onions to the pan and cook until they begin to soften. Add garlic and continue to cook for 2 minutes.
- Add the chicken stock, milk, and pasta to the pan and bring to a boil cooking for 7-10 minutes or until pasta is al dente.
- Add the peas to the pasta and gently stir until they have defrosted.
- Remove the pan from the heat and stir in the cream cheese, sour cream.
- Add the bacon and gently fold it into the pasta.
- Salt and pepper to taste.
- Serve with shredded Parmesan cheese.
