From Easter until the end of summer stuffed eggs, otherwise known as deviled eggs, make an appearance at all of our parties and potlucks.

While we love our classic southern deviled eggs with pickle relish we were inspired to make this deviled ham stuffed egg recipe after we used out leftover Easter ham to make deviled ham.

We masked the deviled ham with the egg yolks and added a little spicy mustard and some mayo and then stuffed it all into the egg white halves. The results was the perfect bite that tastes like spicy ham salad.

Ingredients You’ll Need

Here’s what you’ll need:

  • Hard-boiled eggs – You can use leftovers from Easter or make a fresh batch.
  • Deviled Ham – We have a great recipe for deviled ham here. These deviled eggs make a perfect use for the leftovers. You can also purchased canned deviled ham. 
  • Mayonnaise – We recommend regular mayo, but you can use whatever kind you prefer.
  • Spicy brown mustard – We use spicy brown mustard for this recipe because it helps kick the heat up a bit but you can substitute with Dijon mustard or even yellow mustard if you prefer.
  • Paprika – We use sweet paprika for garnish.

How to Make Stuffed Eggs

Step 1 – Prep the eggs. Cut the peeled, hard-boiled eggs in half and remove the egg yolks. Place the yolks in a bowl. Set the egg white halves aside as you prepare the yolk mixture.

Step 2 – Prep the yolks. In the bowl with the egg yolks, add deviled ham, mayonnaise, and spicy mustard. Mash together with a fork and stir until it’s well combined. Give the mixture a taste and add salt and pepper if you like.

Step 3 – Fill the egg halves. Spoon approximately 1 tablespoon of yolk mixture into each of the egg whites.

Optional – To add a little color you can sprinkle some paprika and/or finely diced chives on top.

How Many Deviled Eggs Per Person

The serving size of a deviled eggs is 2. Since each deviled egg is a half of an egg that is one hard boiled egg per person if you are planning 1 serving per person.

Keep in mind when you are making your menu that some people will eat more than 1 serving and some won’t eat any at all. I plan 3 deviled eggs per person.

6 people = 18 deviled eggs (9 hard boiled eggs)
10 people = 30 deviled eggs (15 hard boiled eggs)
12 people = 36 deviled eggs (18 hard boiled eggs)
16 people = 48 deviled eggs (24 hard boiled eggs)
20 people = 60 deviled eggs (30 hard boiled eggs)

What Are Stuffed Eggs?

Stuffed eggs, also referred to as deviled eggs, are hardboiled eggs that have been split open, yolks removed, and then they are filled back up with a stuffing that usually consists of the egg yolks and a combination of mayonnaise, herbs, and spices.

What is Deviled Ham? 

Deviled ham uses a combination of left over ham, mayo, and spicy seasonings including hot sauce to create a ham filled salad. You often use it as a filling for wraps and sandwiches or as a topper to a salad or cracker.
 
In this recipe we add deviled ham to create a spicy, savory filling for our deviled eggs. 

And though you really don’t need an excuse to make it, deviled ham is a great way to use up that Easter ham.

How to Make Them Ahead of Time 

You can easily make these stuffed eggs ahead of time. That makes them the perfect party food! To make deviled ham stuffed eggs ahead of time follow these instructions:

  1. Boil and peel the eggs up to 3 days ahead of time.
  2. The day before the party cut your eggs in half, remove the yolks, and place your egg halves in a sealed container. Mix in your other ingredients with the yolks and place the mixture in a sealed container.
  3. On the day of the party, fill the egg halves with the yolk mixture and serve.

Tip for Transporting

If you’re taking stuffed eggs to a party, transport the egg halves in a container and place the egg yolk mixture in a gallon freezer bag. When you get to the party, just snip off the corner of the freezer bag and pipe the mixture into the egg halves.

But, if you want to make your stuffed eggs and have them assembled before getting to the party use this deviled egg carrier to get them there safely!

  • 1 tablespoon Spicy brown mustard
  • Paprika for garnish

Instructions

  • In the bowl with the egg yolks add deviled ham, mayonnaise, and spicy mustard. Stir until well combined.
  • Scoop approximately 1 tablespoon of yolk mixture into each egg half.
  • Sprinkle with a tiny bit of sweet paprika and serve.
