This quick and Easy Italian Pasta Salad recipe is a light lunch or dinner recipe with fresh asparagus and prosciutto. Ready in just 5 minutes!
It’s been crazy busy the last couple of weeks and I found myself making this Easy Italian Pasta Salad recipe over and over again for lunch and dinner. It only takes a few simple ingredients, fresh asparagus, prosciutto, penne pasta, rosemary, vineger, olive oil, salt & pepper. From start to finish the whole thing comes together in about 5 minutes and it has so many great flavors that I just never get tired of eating it.
Now I know you’re thinking there is no way my Easy Italian Pasta Salad recipe is made in 5 minutes, just boiling the pasta takes at least 15 minutes. That would have been true before but I recently discovered the new Barilla Ready Pasta Penne in the pasta aisle at Target (COUPON HERE). It’s been a total game changer when it comes to getting dinner on the table even on the busiest nights! Ready Pasta is fully cooked pasta made with 3 simple ingredients: extra virgin olive oil, a pinch of sea salt, and the same quality Barilla pasta we’ve come to expect. It is portable and doesn’t require refrigeration so it’s perfect for meals on the go. When you’re ready for pasta you just tear the top of the package to vent it and then pop it in the microwave for 60 seconds. 60 seconds!! Can’t you believe that? Even though I got home pretty late most nights last week I was still able to eat a home-cooked meal with fresh ingredients instead of stopping somewhere and getting fast food. The Ready Pasta package holds two servings so it is perfect for making dinner for my guy and I. Barilla Ready Pasta isn’t my only trick for getting this pasta salad on the table in a hurry. I also have a quick way to steam asparagus for my Easy Italian Pasta Salad. Take a paper towel and run it under some water then wring it out so it is damp but not dripping. Wrap it around a bunch of trimmed asparagus and put it in the microwave for 3 minutes (microwaves vary so yours may take more or less time). When it comes out of the microwave it is perfectly steamed. Then it is just a matter of chopping it up along with some prosciutto putting them in a bowl with the Ready Pasta Penne and tossing everything with a simple vinaigrette made from rosemary, olive oil, vinegar, salt and pepper.
The prosciutto is super thin so it feels light in the pasta salad but still adds that salty, cured pork flavor that really elevates the dish. The asparagus still has just a little bit of a bite with it and goes perfectly with the pasta and prosciutto with that little bit of tang from the vinaigrette to bring everything together. It’s the perfect light dinner after a long day and if you have leftovers you don’t even need to heat them up the next day. This Easy Italian Pasta Salad is just as good cold as it is warm.

- 1 bag Barilla Ready Pasta Penne
- 8 spears Asparagus , trimmed
- 4 oz Prosciutto , sliced
- 2 Tbsp Olive oil
- 4 Tbsp Red Wine Vinegar
- 1 tsp Rosemary , finely chopped
- Salt and Pepper to taste
Tear top of Barilla Ready Pasta bag to vent and microwave for 60 seconds.
Wet a paper towel and wrap it around the asparagus. Microwave on high for 3 minutes or until asparagus is tender.
While the asparagus cooks whisk together olive oil, red wine vinegar, rosemary, salt and pepper in a small bowl.
When asparagus is ready cut it into 1-inch pieces and place in a large bowl with sliced prosciutto and Barilla Ready Pasta Penne.
Pour the vinaigrette over the pasta and toss to coat. Add more salt and pepper as needed.
