I hope everyone had a great Father’s Day! We had gorgeous weather here and I was lucky enough to have my whole family together so we spent Saturday out on the deck grilling, talking, and watching the kids play in the yard. We had such a great time! We grilled all sorts of things but I had to share these amazing BBQ Bacon Shrimp Skewers. Is there anything in that recipe tile that doesn’t sound delicious?

We put thick cut bacon, sweet peppers, and large shrimp on a skewer and then we basted it in BBQ sauce while it cooked slowly on the grill. OMG, the salty bacon covered in that slightly sweet sauce paired perfectly with the shrimp and those little sweet pepper got a nice smokey char on them that brought out all of their flavor. I was in heaven! I do want to say that bacon doesn’t get super crispy on the grill. I was totally ok with that, I like my bacon floppy anwyay :), but if you want it to be a little crisper then all you need to do is partially cook it (get it to a cooked but floppy state) and then put it on the skewer. That way it will cook the rest of the way to crispy as you go.

Ingredients

  • 1 pound Bacon
  • 1 pound Shrimp, large
  • 20 Sweet Peppers, mini
  • 1 cup BBQ sauce

Instructions

  • Heat grill to medium high.
  • Add ingredients to skewers alternating between bacon, shrimp, and sweet peppers.
  • Brush BBQ sauce on the skewers and place them on the grill.
  • Cook for 4-6 minutes per side, basting with BBQ sauce as they cook.
  • When bacon is cooked through remove skewers and enjoy!
