Celebrate Cinco de Mayo with a Mexican Pizza fiesta this May 5th! Family pizza night is one of my favorite traditions. Every Sunday we find a movie we all want to watch, order pizza (or make our own!), and enjoy some family time together before starting another busy week. Since Cinco de Mayo is on a Sunday this year, we’re breaking out the chips and salsa and making our own Mexican pizzas for a pizza fiesta.

This recipe is so easy that the whole family can join in to make their own. Two Mission® Super Soft Flour Tortillas are baked until they are crisp, with layers of refried beans and seasoned ground beef sandwiched between them. On top, the red enchilada sauce and the cheddar cheese melt together into Tex-Mex bliss. When the pizzas come out of the oven you sprinkle on your fresh toppings. Serve with a big bowl of Mission® Strips Tortilla Chips and fresh pico de gallo and you’re ready to party.

What is in Mexican Pizza?

  • Mission Super Soft Flour Tortillas – Good quality tortillas are the foundation of an amazing Mexican pizza, so I use Mission Super Soft Flour Tortillas and the Soft Taco Flour Tortilla is the perfect size for an individual pizza! These flour tortillas are super soft, and they can be used so many ways. I use them for everything from my Beer Braised Beef Enchiladas, to my King Ranch Chicken Casserole.
  • Refried Beans – A layer of creamy refried beans is the glue that holds everything together.
  • Taco meat – This is a mixture of ground beef, onions, and taco seasoning. You can make your own taco seasoning, or you can pick up a packet at the grocery store.
  • Enchilada sauce – This is the sauce for your pizza and instead of going on the bottom, it goes on the top! I am an enchilada sauce snob, so I make my own homemade enchilada sauce but if you want to save time you can buy a can of sauce at the grocery store.
  • Cheese – What’s pizza without cheese?! Freshly grated cheddar cheese or a Mexican cheese blend is sprinkled over the enchilada sauce before the pizza is baked.
  • Toppings – Fresh toppings go on top of the Mexican Pizza when it comes out of the oven. You can use any of your favorite taco toppings, tomatoes, black olives, avocado, sour cream, or cilantro. There is no wrong topping!

How to Make Mexican Pizza at Home:

  1. In a skillet over medium-high heat, add ground beef and cook until it begins to brown.
  2. Add onions to skillet and continue to cook until meat is cooked through.  
  3. Drain any excess grease from the meat and return to skillet before adding the taco seasoning and ¼ cup of water. Continue to cook, stirring together, until water cooks away. Set taco meat aside.
  4. In a large skillet over medium-high heat, spray the skillet with cooking spray and cook each tortilla. Mission Super Soft Flour Tortillas always taste best when they are warmed before serving. If you are making them for another recipe, follow the recipe on the back of the package for warming instructions. For this recipe we want to cook them until they begin to crisp slightly, approximately 1 minute per side. Set aside.
  5. Preheat oven to 400 degrees F.
  6. Place a tortilla on your baking sheet and add one layer of refried beans, and one layer of taco meat.
  7. Place the other tortilla on top and spread enchilada sauce over the top and top with shredded cheddar cheese.
  8. Continue this process with the rest of the tortillas.
  9. Place the baking sheet in the oven and bake for 5-7 minutes, until cheese is melted.
  10. Remove from the oven and top with your favorite fresh ingredients.
  11. Cut into 4 slices and serve.

What to Serve with Mexican Pizza:

Notes

Note: Most likely only 2 Mexican Pizzas will fit side-by-side on your baking sheet, so you will have to bake these in batches, two at a time.
