What is in Mexican Pizza?
- Flour Tortillas – You’ll use 8-inch flour tortillas for this recipe rather than corn tortillas. Buy a few extra packs and try our Chicken Enchilada Casserole, King Ranch Chicken Casserole, or chicken quesadillas.
- Refried Beans – A layer of creamy refried beans is the glue that holds everything together.
- Taco meat – This is a mixture of ground beef, onions, and taco seasoning. You can make your own taco seasoning, or you can pick up a packet at the grocery store.
- Enchilada sauce – This is the sauce for your pizza and instead of going on the bottom, it goes on the top! I am an enchilada sauce snob, so I make my own homemade enchilada sauce but if you want to save time you can buy a can of sauce at the grocery store.
- Cheese – What’s pizza without cheese?! Freshly grated cheddar cheese or a Mexican cheese blend is sprinkled over the enchilada sauce before the pizza is baked.
- Toppings – Fresh toppings go on top of the Mexican Pizza when it comes out of the oven. You can use any of your favorite taco toppings, sour cream, tomatoes, pickled jalapenos, pickled red onions, black olives, avocado, sour cream, or cilantro. There is no wrong topping!
How to Make Mexican Pizza at Home:
Step 1 – Make taco meat. In a skillet over medium-high heat, add ground beef and cook until it begins to brown.
Add onions to skillet and continue to cook until meat is cooked through.
Drain any excess grease from the meat and return to the skillet before adding 2 tablespoons of taco seasoning and ¼ cup of water. Continue to cook, stirring together, until the water cooks away. Set taco meat aside.
Step 2 – Toast tortillas. In a large skillet over medium-high heat, spray the skillet with cooking spray and cook each tortilla until they begin to crisp slightly, approximately 1 minute per side. Set aside.
Step 3 – Prepare oven. Preheat oven to 400 degrees F.
Step 4 – Season beans. In a bowl combine refried beans and the remaining 1 tablespoon of taco seasoning. Stir together until fully combined.
Step 5 – Assemble pizzas. Place 4 tortillas on your baking sheet and add one layer of refried beans and one layer of taco meat to each tortilla.
Place a second tortilla on top of each and spread the enchilada sauce over the top. Sprinkle with shredded cheddar cheese.
Step 6 – Bake. Place the baking sheet in the oven and bake for 5-7 minutes, until the cheese is melted.
Step 7 – Serve. Remove from the oven and top with your favorite fresh ingredients. Cut into 4 slices and serve.

The pizzas were really good!! I followed the recipe as written, except I mixed the hamburger and refried beans together. It makes it easier to spread on the tortillas. That hint came from a freezer bean and beef burrito recipe that I use. Anyway, thanks for posting.

You have a 1/2 cup of water listed in the ingredients. However, the directions say 1/4 cup. Which is it? By the way I’ve already tried this recipe, it was easy and I loved it. I thought cooking the tortillas in a pan was a great idea. Thanks for posting.
