One night I was craving pasta and spice, and this dish was born. It’s like if buffalo chicken dip and a cheesy pasta casserole had a baby (and didn’t require baking). The result? A crave-worthy buffalo chicken pasta that’s now on regular dinner rotation!

  • 8 ounces Penne pasta
  • 1 tablespoon Olive oil
  • ½ cup Diced onion
  • ½ cup Diced celery
  • 10 ounces Rotel
  • 4 ounces Cream cheese, softened
  • 1/3 cup Buffalo sauce
  • 2 tablespoons Ranch dressing
  • 8 ounces Shredded rotisserie chicken

Instructions

  • Cook penne pasta according to package instructions. Once cooked drain water and set aside.
  • Heat a large skillet over medium-high heat. Add olive oil, diced onion, and celery to the skillet and cook for 5-7 minutes until onion and celery are softened.
  • Add the Rotel and cream cheese and stir until well mixed. Make sure there are no cream cheese lumps.
  • Turn the heat to low and add the buffalo sauce and ranch dressing stirring them into the sauce.
  • Add the shredded chicken and cooked pasta and stir until they are coated in sauce and the chicken is heated through.
