This Mexican Sunset Dip made with creamy cheese, spicy Mexican chorizo and green chilies, and salsa is perfect for parties!
Yesterday I told you all of the things I have planned for my Halloween party but that isn’t the only entertaining we’re doing this month. We’re deep into football season and that means on the weekends we have people over, or head to a friend’s house to watch the game. I have more than a few recipes that I like to make for parties and game days, but sometimes a girl has to try something new! I ran across a recipe for Sunset Dip on Campbell’s Kitchen recently and last weekend I decided to make it…with a twist.
The original recipe calls for layers of cream cheese, cheddar cheese and Pace salsa. I just added a little more spice with some Mexican chorizo, and green chilies. If you don’t have Mexican chorizo in your area you can substitute any spicy sausage for it. The recipe is still simple. I cooked the ground sausage, drained it, and then mixed in green chilies and cream cheese. I spread the mixture in the bottom of a 9 inch ceramic casserole dish and sprinkled the top with cheddar cheese. Then I popped the whole thing in the microwave for 2 minutes (until the cheddar cheese was melted). If you don’t want to microwave it you can bake it in the oven at 350°F for 10 minutes or until the cheddar cheese is melted. Once it was cooked I added Pace salsa on the top, leaving a little outer ring of cheddar cheese showing, to give it that sunset look. I can find a reason to add salsa to almost any recipe, from breakfast eggs to chicken burritos. I love that extra little kick Pace gives everything and right now 16 oz. jars are on sale at Safeway 2/$4 during their Stock Up sale 9/30 – 10/13.
I served mine with tortilla chips but I also think it would be awesome with warm tortillas, or corn chips. I loved the combination of the creamy cheese with the spicy chilies and sausage, and it disappeared quickly during Sunday’s game so I’m calling it a success!
Mexican Sunset Dip
- 8 oz. Cream Cheese
- 8 oz. Mexican Chorizo, ground (you can substitute any spicy sausage)
- 4 oz. Green Chilies
- 4 oz. Cheddar Cheese, shredded
- 1 c Pace® Original Salsa
- In a skillet over medium high heat cook chorizo.
- Drain grease from chorizo and add it back to the pan along with cream cheese, and green chilies.
- Mix thoroughly.
- Place cheese mixture in a 9-inch ceramic pie dish and smooth it out to cover the bottom of the dish.
- Sprinkle shredded cheddar cheese over the cream cheese mixture.
- Microwave on high for 2 minutes, or bake at 350°F for 10 minutes, or until cheddar cheese has melted completely.
- Top with salsa and serve with chips.
