Delicious Low Carb Recipes
The new year is here and with that comes everyone’s resolution to eat better and exercise. Let me help you with the eating better part by sharing my favorite Delicious Low Carb Recipes.
Kat and I have been low carbing it up for over a year now. I can honestly say that it has been the best way for us to lose weight. It took about a month to adapt but once we did, it was super easy and the pounds just melted away. There is a misconception that if you can’t eat carbs like pasta, rice and potatoes that food doesn’t taste as good. Well that is not true! Here are few low carb recipes and great low carb substitutes to help with your New Year’s resolution.
Have you ever heard of a bacon weave? Sounds pretty incredible, bacon strips woven together to create a perfect wrap for all sorts of meals. The bacon weave wrapped around this Bacon wrapped Pork Loin stuffed with Prosciutto & Provolone keeps the pork super moist and juicy.
Pad Thai is one of my favorite things but it is hard to find it low carb so I had to get creative. This Zucchini Pad Thai is made with splenda and has all of the flavors that make Pad thai delicious without all of the carbs!
It’s a classic lasagna made without pasta! You can have the same great taste just by substituting one ingredient. I have made this Zucchini Lasagna several times, it’s a family favorite.
Shrimp ceviche is super simple to make and it is light, and bright. I especially love it when it is nestled inside of a creamy avocado. Gotta love those healthy fats and lean protein!
This Zucchini Pasta with Prawns & a Creamy Avocado Basil Sauce tastes so good you can’t even tell that the pasta is missing. Skeptical? Try it out for yourself and you will be a believer!
No your eyes are not playing tricks on you, yes this is pizza! With this Cauliflower Pizza Crust you can still enjoy your favorites and satisfy your pizza craving.
This Beef Stroganoff is one of my husbands favorite. Serve it over mashed cauliflower for a can’t-miss meal.
These Stuffed Tomato Tuna Melts are easy to make and they are absolutely delicious! Fresh tomatoes, tuna, and cheddar cheese melted together for the perfect low carb meal!
You can still enjoy wraps, just sub out the tortilla wrap for lettuce. These Chicken Club Lettuce Wrap are delicious!
Here’s a hearty stew made with Beef Sirloin Steak and Spinach. You can add more veggies to make a it a complete meal.
This Avocado Tuna Salad makes a simple dinner or lunch idea. Pica de Gallo, fresh avocado, and creamy tuna salad are a great low carb meal. I love a fancy presentation but you don’t have to go through the trouble if you’re short on time. Just mix everything up and dig in!
Jazz up those boring chicken breast by stuffing it. This Stuffed Chicken Parmesan gives you the same great classic taste of chicken parm without the bread crumb coating.
This Chicken Florentine only takes 30 minutes to prepare. Low carb and quick! Can’t beat that.

Oh my gosh…thanks so much for these. My husband is so sick of a slab of meat and a veggie on his plate every night. LOL! Well, it really isn’t quite that bad but it is getting to be the same old thing. I really want to live a low carb lifestyle and he is making it so hard. It think recipes like these will help a lot. You aren’t alone, lol. Melinda is lucky her hubby is the one who got us into this way of eating but my guy doesn’t make it easy (he LOVES bread and chocolate;)). There are some great recipes in that round-up I hope he likes them!

These are all really yummy looking ideas! I would love to try the cauliflower crust – I’ve been having fun experimenting with cauliflower, so many options! Keep up the good work, low-carb is great even when it’s hard!
